Make the crust by combining your graham cracker crumbs, sugar, and melted butter. Once combine, evenly spread out your crust into the bottom of a 9” springform pan. Bake at 350°F for 10 minutes.
Mix cream cheese, sugar, and vanilla at medium speed with an electric mixer until well blended. Add eggs; mix until well blended. Pour into crust. Bake at 350°F for 40 minutes or until center is almost set. May top with sour cream topping for last 10 minutes of baking. Cool. Refrigerate for 3 hours or overnight. Serve. (Optional: add syrups, assorted fruits, or nuts to top)

- 16 ounces of Neufchâtel cheese, softened
- 1/2 cup of sugar
- 1/2 teaspoon of vanilla
- 2 eggs
Sour Cream Topping:
- 1 cup of sour cream
- 1 teaspoon of vanilla
- 2 tablespoons of sugar
